Déclinaison du traditionnel canelé sucré, la version salée ne contient ni sucre, ni rhum, ni vanille mais des petits oignons confits. La croûte croquante et l'intérieur moelleux est préservé grâce à l'utilisation de moules en cuivre et de cire d'abeille.
Philippine est garni au fromage de chèvre frais mélangé avec du doux miel du Gâtinais. Un petite buchette de chèvre grillée le décore.
