Aux Deux Canelés, everything is daily, and home made in our kitchen lab located in our boutique.
We do not use any food additive, preservatives, coloring, flavor enhancer, glucose or any product not raw and natural.
Our ingredients are chosen with great care and must meet our priorities: quality, freshness, regional or traceable sources.
Eggs come from Oise and all the dairy products from Normany or Brittany.
The flour comes directly from Seine et Marne.
The salmon is label rouge and originates from a drying fish unit at Versailles where all the drying stages are manually handled.
High quality equipment
To insure tasty and perfect canelés, apart from the love we put in our work, our secret is to invest in high quality traditional canelés copper molds buttered with bee wax.
We work with providers making use of waste products.
This is a scarce commodity, so should you have good regional products and that you already chose that option, please contact us.
The packaging is as important as the goods we use. To avoid pointless packaging, we order in great quantity. The vegetables and the fruits are stocked in wooden crates and not in plastic bags. Our waste is totally recycled.
The cardboard packagings are neatly folded and given for free via the Donnons.org web site.
We reduce waste by small daily actions, such as no baking paper under our canelés, a sugar bowl for coffees instead of individual wrapped sugar cubes.
We are not yet perfect but excellency is our aim.
